Chicken Fajita Bowls with Pineapple Black Bean Salsa
from The Big Green Egg

These brightly flavored fajita bowls with a tropical splash are perfect meal to impress family or friends on a warm summer evening.

Fajita Bowl Ingredients:

Pineapple Black Bean Salsa
1 cup uncooked brown rice
1 tablespoon chili powder
1 ½ teaspoons ground cumin
1 ½ teaspoons garlic powder
1 teaspoon sweet paprika
¼ teaspoon salt
⅛ teaspoon freshly ground pepper
1 pound boneless skinless chicken breasts, trimmed and cut into 1-inch pieces
2 tablespoons olive oil, divided
2 bell peppers (any color), cut into thin strips
1 large onion, cut into thin strips
4 ounces Cabot Pepper Jack, Cabot Seriously Sharp Cheddar or Cabot Jalapeno Light Cheddar, grated (about 1 cup)
¼ cup Cabot 2% Plain Greek-Style Yogurt

Pineapple Black Bean Salsa Ingredients:

1 (15-ounce) can no sodium or low sodium black beans, rinsed and drained
1 1/2 cups finely diced fresh pineapple
1 avocado, peeled and diced
1 cup halved grape tomatoes or quartered cherry tomatoes
1/2 jalapeno pepper, seeds removed and finely diced
1/2 cup defrosted frozen corn kernels
1/2 cup sliced green onions (about 2)
1/2 cup roughly chopped fresh cilantro leaves
2 tablespoons fresh lime juice (about 2 small limes)
1/4 teaspoon salt

Grilling Steaks On The Big Green Egg

You may not know that you Big Green Egg is fully qualified for pursue a flaming hot, rapid cooking approach, excellent for steaks! Pump your BGE over 500F degrees, by removing the ceramic deflector and you are on your way to steakhouse-style ribeyes!

Let’s begin by lighting your Big Green Egg, add lump charcoal, filling to the first line.  Add a natural charcoal starter into the charcoal and light it. We recommend a pre burn of 8 minutes.

Season your steaks generously with favorite steak rub, and let it rest at room temperature while you begin to light your BGE.

Now set the cooking grate inside the egg container and push the lid downward.  We recommend adjust the temperature to about 550F degrees. The bottom vent will be wide open and the top vent will be primarily open.

Bison Prime Rib Roast from The Big Green Egg

A healthy alternative to beef, bison is lean, moist and hearty. This recipe lets the natural flavor of the meat speak for itself with just a little seasoning for an accent.

Ingredients:
1 bison prime rib roast
3-4 garlic cloves, minced
Olive oil (as desired)
3 tablespoons NorthStar Seasoning, or your favorite seasoning mix or rub

Catfish with Tomato Salsa from O’Neill Outside

Ingredients:

2 pounds Catfish
Olive oil
Lemon wedges
1 pound ripe tomatoes, chopped and seeded
¼ cup basil finely chopped
½ cup olives, drained, pitted and chopped
1 ½ tablespoon capers, drained
1 green onion, green part only, chopped
½ cup olive oil
Juice of ½ lemon
Salt and pepper

Artichoke Hearts with Herb Butter from The Big Green Egg

These warm, hearty artichokes are an easy-to-make but impressively elegant side dish to nearly any summer meal.

Ingredients:

5-6 medium artichokes 4 teaspoons sea salt
1 lemon, chopped
3⁄4 cup olive oil
1⁄4 cup white wine vinegar
6 cloves garlic, minced (or more)
1 lemon, juiced
1 stick organic unsalted butter, room temperature 3 tablespoons fresh parsley, chopped
Fresh ground black pepper, to taste

Another Big Green Egg Recipe great summer side dish, this French-inspired recipe uses fresh, seasonal vegetables; and the outcome is as tasty as it is healthy.

Zucchini

Paella – Chicken and Sausage from Big T’s Big Green Egg Recipe Blog

This Spanish dish is as pleasing to the eye as to the taste buds with bright yellow saffron rice and a rainbow of meats and vegetables mixed in.

Ingredients:

½ -3/4 Lb. boneless, skinless chicken thighs (substitute Breasts with Rib Meat and Organic if available) chopped into bite size pieces

½ teaspoon turmeric

½ teaspoon pimentón (Spanish Paprika – sometimes smoked)

Dash (1/16th Tsp.) oregano

Extra virgin olive oil

½ Lb. mild Italian sausage (ground)

1 medium Vidalia onion, chopped

1 red bell pepper, chopped

1 orange bell pepper, chopped

10 ounces rice – yellow saffron pre-spiced medium rick

3/4 cup diced plum or Amoroso tomato

½ teaspoon red pepper flakes

Garlic to taste 2-3 large garlic cloves

3 cups organic, chicken broth, low sodium

1 cup frozen broccoli, thawed

½ cup frozen peas, thawed
